Clear or standard: choosing an emulsion for your beverage

The choice comes down to what the drink looks like, not what it contains.

Beverage emulsions come in two broad styles, and the right one is set by the product, not by preference.

A standard emulsion is the workhorse. It carries the most cannabinoid per millilitre, so the dose is delivered in the smallest volume and has the least effect on flavor and mouthfeel. It adds a faint haze. In a juice, a coffee, a dairy alternative, a syrup or any drink that is already opaque, that haze is invisible.

A clear emulsion is built for products that must stay transparent: seltzers, flavored waters, clear sodas and spirits-style drinks. Getting there means smaller droplets and a formulation tuned so that they scatter almost no light. Clear emulsions typically carry a little less cannabinoid per millilitre than a standard one, so the dosing volume is slightly higher.

The decision tree is short. If a consumer can see through the finished drink, use clear. If not, use standard and keep the volume down. In both cases the questions to ask a supplier are the same: what droplet size, what pH range has it been tested in, how does it behave with salt and solids, and what happens over the shelf life in the actual base.
